These keto taco bowls (with our 2g net carb tortillas!) are nothing short of supreme! Expect a super flavorful beef filling, topped off with whatever your heart desires (i.e. everything!).

Ingredients

For the ground beef filling

extra virgin olive oil or avocado oil, for cooking
1/2 medium onion very finely chopped
4 tablespoons taco seasoning * see notes!
500 g ground beef
1/4 cup black olives sliced

To serve

1 batch our grain free & keto tortillas
avocado
Mexican crema or sour cream
queso or feta cheese and cheddar
salsa
jalapeños

Instructions

For the keto tortillas

Make a batch of our keto tortillas and preheat oven to 350°F/180°C.
Shape the taco bowls by placing the tortillas into the fluted bolds (or muffin tray!). Make sure the tortillas are warm so they don't break. Bake for about 15 minutes, or until crisp, while you cook the beef.

Cook the beef!

Heat up oil in a skillet over medium heat. Add in the onion and cook, stirring often, until the onion begins to caramelize (7-10 minutes). Move the onion to the side and heat up a tablespoon of oil, add in the taco seasoning spices (so they bloom briefly in the oil!) and stir everything together.
Add in the ground beef and continue to cook, stirring every so often, until the beef is cooked through. If your beef feels dry (usually a lean variety), feel free to add a couple tablespoons of water to keep it nice and moist. I also like to add in my black olives near the end of cooking for an extra flavor boost!

To assemble the taco bowls

Add cooked beef to the taco bowls and serve with toppings of choice!

Notes

The Keto Taco Seasoning

You've got two options here! Either buy a ready-made mix such as this one... but note that I haven't found one yet that doesn't have maltodextrin.

So you can simply mix your own, and get full control according to your taste buds (what I do!).

Feel free to adjust quantities to taste, but taco seasoning is simply a mixture of:

1 1/2 tablespoons chili powder (they're New Mexico cultivar chili peppers)
2-3 teaspoons cumin
2 teaspoons paprika
1 1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon dried onion
1/2 teaspoon ground black pepper
salt, to taste (roughly 1 teaspoon)
I also like to add a touch of chipotle powder and a dash of cayenne pepper for some extra spiciness!

A batch of seasoning yields 4 tablespoons (=1/4 cup) and will be good for 1 pound of ground beef.
